Recipe: Pumpkin Flan

Pumpkin Flan

 

 

What You Need:

 

2 c. sugar

1 c. whole milk

2 (5 oz.) cans evaporated milk

5 large eggs

¼ tsp. salt

1 (15 oz.) can solid-pack pumpkin

2 tbsp. premium gold tequila or bourbon

2 tsp. ground cinnamon

1 tsp. ground ginger

¼ tsp. ground allspice

¼ tsp. ground nutmeg

 

Directions:

 

  1. Preheat oven to 375°F.
  2. Heart a 2-quart soufflé dish or round ceramic casserole dish in middle of oven.
  3. Cook 1 c. sugar in a dry 2-qt. heavy saucepan over low heat, stirring slowly with a fork until melted and pale golden brown.
  4. Cook caramel without stirring, swirling pan, until deep golden brown, about five minutes.
  5. Quickly and carefully remove hot dish from oven and immediately pour caramel into dish, tilting it to cover bottom and sides. Keep tilting as caramel cools and thickens enough to stay in place.
  6. Scald whole milk with evaporated milk in a saucepan and remove from heat.
  7. Beat eggs and remaining cup of sugar with an electric mixer until smooth and creamy.
  8. Beat in salt, pumpkin, tequila, and spices.
  9. Pour mixture through a sieve into a bowl and beat pumpkin mixture until well combined.
  10. Pour custard over caramel in dish and set in a water bath of 1 in. hot water. Put pan in middle of oven and lower temperature to 350°.
  11. Bake until golden brown on top and knife comes out clean.
  12. Remove dish from water bath and transfer to a rack to cool. Chill flan, covered, at least six hour or until cold.

Recipe: Pumpkin Marble Cheesecake

Pumpkin Marble Cheescake

 

 

What You Need:

 

1 ½ c. Gingersnap crumbs

½ c. finely chopped pecans

1/3 c. margarine, melted

16 oz. cream cheese, softened

¾ c. sugar

3 eggs

1 c. canned pumpkin

¾ tsp. cinnamon

¼ tsp. ground nutmeg

1 tsp. vanilla

 

Directions:

 

  1. Combine crumbs, pecans, and margarines. Press onto bottom and 1 ½ inches up the side of a 9-in. springform pan.
  2. Bake at 350°F for ten minutes.
  3. Combine cream cheese, ½ c. sugar, and vanilla until well blended.
  4. Add eggs, one at a time, mixing well after each addition.
  5. Reserve 1 c. batter, chilled.
  6. Add remaining sugar, pumpkin, and spices to remaining batter. Mix well.
  7. Alternately layer pumpkin and cream cheese batters over crust.
  8. Using a knife, cut through the layers to create a marble effect.
  9. Bake at 350°F for 55 minutes.
  10. Loosen cake from rim of pan. Let cool before removing rim of pan.
  11. Chill until serving.

Concrete floors are a great, modern alternative. Not only are they durable, they can lend a very industrial look to a home. Concrete floors can be glossy or not. One popular option is to paint them a flat color, stencil a design all over or just on a certain portion of the floor, or mimic “tiling” by painting different colored squared on them. You can even get concrete floors that look like hardwood floors! The care for concrete floors is very easy, just sweeping and wiping down as needed, or repainting if yours are painted.
