If you’re a San Diego local, you know there’s an abundance of delicious Mexican and Asian cuisine to experience. The Tabe BBQ Fusion truck takes elements from both popular Mexican and Korean dishes to create an amazing and tasteful meal.

Their most popular menu items are the OMG Korean BBQ tacos and burritos, where marinated Korean ribs or seasoned chicken are put in a traditional taco shell or burrito alongside Mexican-style vegetables and sauces. Another highly recommended dish and one we have personally tried and loved is the Tabe Asada Fries which are skinny-cut fries mixed with cheeses, onions, peppers, hot sauce, and of course Korean BBQ beef.

Fidel’s Little Mexico has been a staple for North County locals since 1960. The house-turned-restaurant  consists of three different levels, including a festive courtyard, a couple of bars and outdoor patios, and a taco bar. In addition to the fabulous venue, the Mexican cuisine takes you right to the border.

Starting with the bare necessities, Fidel’s is all about their chips and salsa. Once you dip your first chip into their spicy, yet sweet salsa, we can assure you that you won’t be able to stop. The menu offers classic items such as enchiladas, huevos rancheros,  fajitas, and countless burritos, just to name a few.

As a weekly-Fidel’s customer, it is highly recommended that you order the chicken and rice soup, as well as a patron margarita (on the rocks, with salt, of course 🙂 The chicken and rice soup is simple and consists of only avocado, cilantro, and onions while served with your choice of flour or corn tortillas. Also, be sure to order a side of enchilada sauce to dip your chips in…you won’t be disappointed!

In need of an authentic taco stand experience?  The Taco Stand just opened up a new located in the heart of Encinitas! This family-owned  taquería specializes in combining different variations of meats and ingredients, resulting in a lot of flavor. In addition to its flavorful menu, The Taco Stand has become an instant hot-spot due to it’s convenient late-night hours and coastal location.

Be sure to try the “Al Pastor” and “Nopal” Taco’s.  The “Al Pastor” taco consists of rotisserie marinated pork, cilantro, onions, cilantro sauce, and pineapple.  The “Nopal” taco is vegetarian and consists of flamed grilled cactus, melted cheese, cilantro sauce, tomato, and avocado.
