What You Need:
1 pork tenderloin
2 medium onions, sliced
1 c. chicken stock
¾ can tomato paste
- Rub a generous amount of salt and garlic powder over the tenderloin.
- On medium high heat, sear all sides in olive oil.
- Remove from pan and set aside.
- Lower the heat and cook sliced onions for a few minutes.
- Add chicken stock and tomato paste and stir until combined.
- Put pork back in.
- Cook on stove for 45 mins to one hour.
